A friend of mine and I had lunch last week and came to a wonderful new realization: We are both foodies! Neither of us have much time to cook, but we love well spiced food (her being Indian and me, African) that tastes good and is also good FOR you. A hard combo to nail down, but she suggested I check out her friend’s blog. What a find! The author is a super sweet lady with a newborn and writes on healthy Indian “feast” dishes as well as keeping healthy and fit in the postpartum after birth glow. Not that I have any babies yet, but these are good things for any woman to keep in mind! Who knows when you might need it, or know someone else who does.
So without further adue, here is a quick-easy-tasty-fresh cucumber salad with a simple set of ingredients and perfect for the spring season.
You will need:
2 fresh cucumbers, chopped or grated
1 tbsp roasted and coarsely ground peanuts (you can add more peanuts but just keep in mind that it adds to the fat calories too! )
1/2 green chilli, chopped fine
1 tsp toasted cumin seeds or cumin powder
1/2 tsp sugar (to balance the tang of the lemon)
2 tsp lemon juice (you can add more if you like your salad tangier)
salt to taste
some chopped coriander to garnish (I tend to add more as it adds to my salad)
– To the chopped/grated cucumber add all of the above ingredients, give it a good toss. Taste it, adjust seasoning. Garnish with coriander and serve!
